My insurance company gave me a low settlement–do I have the right to request a copy of the field adjuster’s estimate?

You definitely should ask in writing for that estimate and the adjuster’s notes. "Insurance companies must notify policyholders of their right to receive any detailed report/estimate developed by the adjuster.
