How does the insurance payout deal with me adding more sq ft

I’m in California. I had a total loss fire and I am building back with twice the sq footage then was there before. I understand that they only pay for what was there before but for example the architect doing the plans is one fee for the whole project. How does the insurance payout divide that? Is it a percentage?

Thank you.

The carrier does only pay for what you had before the fire. This means that you should get a quote for your architect’s services for how much the architect will charge to draw out all the plans for the rebuild as was and submit that to the carrier. Anything above and beyond is up to you to cover in terms of payment.
